Mock Special
An elevated dish from my childhood.
Serves 2-3, depending on your stomachs.

Here’s what you need to make the thing:
1 tablespoon salted butter (Divided)
1 tablespoon olive oil (Divided)
1/2 large yellow onion, sliced
2 cloves garlic, minced
2 bell peppers, seeded and sliced ( I use Green and Red)
1 jalapeño, seeded and chopped.
1 lb red potatoes, roughly peeled and cut into 1/2 inch cubes
3 strips of bacon, chopped into small bite-sized pieces
1 lb ground beef, turkey, or sausage. You can also do a mix
1 tsp oregano
Salt to taste
Pepper to taste
30g shredded mozzarella cheese
Here’s how to make the thing:
In a large skillet, over medium-high heat, add 1/2 of the butter and 1/2 of the oil.
Heat until butter is melted and then add the onion.
Sauté until golden brown, around 5 minutes.
Add the bell pepper and jalapeno and sauté for an additional 3-5 minutes.
Remove from skillet and set aside.
To the same skillet, add the remaining butter and oil.
When butter is melted, add the potatoes and oregano.
Cook, turning on all sides to golden brown.
Remove and side aside.
Add bacon to skillet and cook until crispy.
Remove bacon, leaving the grease, and transfer to a paper towel lined plate.
Add ground beef and cook, breaking it apart, until nearly cooked through.
Add garlic and cook until fragrant, about 1-2 minutes.
Salt and pepper to taste.
Add the bell pepper and onion mixture, potatoes, and bacon back to the skillet and stir to combine.
Turn off heat.
Add more salt and pepper if desired, sprinkle all over with mozzarella cheese.
Place lid on skillet and let cheese melt slightly.
Serve.
