Mock Special


An elevated dish from my childhood.

  • Serves 2-3, depending on your stomachs.

  • Skill level: 3

  • Spice level: 3


Here’s what you need to make the thing:

  • 1 tablespoon salted butter (Divided)

  • 1 tablespoon olive oil (Divided)

  • 1/2 large yellow onion, sliced

  • 2 cloves garlic, minced

  • 2 bell peppers, seeded and sliced ( I use Green and Red)

  • 1 jalapeño, seeded and chopped.

  • 1 lb red potatoes, roughly peeled and cut into 1/2 inch cubes

  • 3 strips of bacon, chopped into small bite-sized pieces

  • 1 lb ground beef, turkey, or sausage. You can also do a mix

  • 1 tsp oregano

  • Salt to taste

  • Pepper to taste

  • 30g shredded mozzarella cheese


Here’s how to make the thing:

  • In a large skillet, over medium-high heat, add 1/2 of the butter and 1/2 of the oil.

  • Heat until butter is melted and then add the onion.

  • Sauté until golden brown, around 5 minutes.

  • Add the bell pepper and jalapeno and sauté for an additional 3-5 minutes.

  • Remove from skillet and set aside.

  • To the same skillet, add the remaining butter and oil.

  • When butter is melted, add the potatoes and oregano.

  • Cook, turning on all sides to golden brown.

  • Remove and side aside.

  • Add bacon to skillet and cook until crispy.

  • Remove bacon, leaving the grease, and transfer to a paper towel lined plate.

  • Add ground beef and cook, breaking it apart, until nearly cooked through.

  • Add garlic and cook until fragrant, about 1-2 minutes.

  • Salt and pepper to taste.

  • Add the bell pepper and onion mixture, potatoes, and bacon back to the skillet and stir to combine.

  • Turn off heat.

  • Add more salt and pepper if desired, sprinkle all over with mozzarella cheese.

  • Place lid on skillet and let cheese melt slightly.

  • Serve.


  • To turn down the spice

    • De-vein the all peppers

    • Sub Half of another bell pepper, chopped for the Jalapeño.
